The pickiness of a chef will determine their buying habits. If the chef is adamant about freshness and quality of food, they will expect a daily delivery of the best produce, therefore expect a daily order. The picky chefs are often the most loyal though. If you impress them with your constant quality of supply, you will be guaranteed a long-term contract, which is the most ideal business relationship between a restaurant and a food service supplier.
A chef will have a good idea on what non-perishables they will go through each day. To save money, they may order these food items in bulk. A food service supplier should make a note of a chef’s buying habits and ensure they can cater to a chef’s needs, as required. Communication is so important to ensure a smooth exchange.
If a chef finds the food supplies to be inadequate or not to the quality they expect, they will stop ordering and cancel future deliveries to find a new supplier. If a restaurant stops ordering supplies, a food service provider should call to find out why and make amends with their food supplies. It may not fix the immediate agreement, but will hopefully prevent the loss of other contracts.
If a chef is happy with the quality of the food delivered, they will be hard to sway to another supplier, unless cost or delivery needs are considered. Depending on the type of restaurant, quality chefs in 5-star restaurants will only resort to the best food suppliers, not necessarily the cheapest.
A chef will come up with a new dish as a promotional feature for the restaurant. This will require purchasing different supplies. Don’t be surprised by unusual orders. They may only be covering a monthly or seasonal special.
Most chefs will create a menu that suits the seasonal food supplies that are readily available and more economical to purchase during that season. Expect the food orders to be different from season to season. This may mean their purchase amounts will differ each season.
Once a food service supplier understands chef buying habits, they can tailor their service to meet those needs.
